I do all my immersion frying in a 5 quart cast iron dutch oven. I like it cause it's nice and heavy and that mass retains heat so that the oil can recover it's heat faster after you add cold food to it. You can also control the temperature. Ever hear of frying twice? To make good homemade french fries,...you want to fry them up on a low temp (like 325 more of like a blanch in oil) to soften the interior of the fry then crank the temp (375 to 400 degrees) and fry a second time to get a crispy outside.

As long as you stick with high quality canola or peanut oil and you don't overfill the pot and you monitor the temp with a fryer/candy thermometer you'll be fine from a safety standpoint (you do have a fire extinguisher in your kitchen; right? RIGHT?). Dutch Ovens are cheaper; way easier to take care of and you can use it for more than just immersion frying. I make soup/stew/chilli/Shepard's Pie/Beer Brats in my dutch oven all the time. I've even taken it to bonfires and cooked in it.

Be aware that Cast Iron is a reactive metal so it will go through oil quicker than a pot constructed from say,...Stainless Steel. Unsaturated oils are the ones that have a high enough smoke point to handle high temp frying. But being as the oils are unsaturated they have an unchecked molecule bond that will happily grab a hold of other free molecules (like you know,...Iron Molecules) and shorten the usable life of the oil. The only reason I haven't switched to a non reactive Stainless Steel pot is because I haven't found one cheap enough or heavy enough to match the performance of my Cast Iron Dutch Oven.

Deep Fryers are cool but you want one that has a temperature control and is easy to clean. You gotta find one that has a removable heating coil that actually drops down into the oil. That way you can remove all the electronic bits to be able to submerge the oil vessel in water in order to clean it.

Fry Daddies (and a lot of the other fryers on the market) suck for that since the coil is permanently attached to the bottom of the vessel. They are just way more hassle to thoroughly clean. Not to mention that the Fry Daddies I've had experience with do not have a temp control on them (no crispy homemade french fries = sadface).

Deep Fryers also,...to my knowledge only preform one task and take up space in the kitchen. Look at your stove, it's just sitting there laughing at you as you pull out and fumble with you does only one thing deep fryer. Conversely; Put a nice big heavy pot on that stove (it's there anyway,...might as well use it ammirite) and that makes a perfectly good fryer IMO.
