I would just get a blank deck from a local shop or I can suggest some online guys. Most of the time they are the same as the pro boards but 1/2 the cost. I've been skating for about 10 years, and that's what I typically do...unless I want a cool old school shape.
I think an 8" wide board would be good.
Trucks...independent are what I have been riding most but they all do what you need. Industrial makes good lower cost trucks.
Bearings...Bones Reds are really good and cheap ($15ish) but again, just about any will do.
Wheels...these come in different sizes and durometer (hardness) and what you get will depend on what you're riding (smooth park/ramps vs rough street/ditches). For general skating, try something between 53-55mm and 95-101 duro (smaller the number the softer the wheel).

MiniLogo decks have a good reputation for blank decks. I had one, t'was nice. It'll be hard to know exactly what deck width/concave shape you'll like until you try out different ones for yourself. Try going to a skateshop and standing on desk to get a feel of the width/concave and what you're comfortable with. Might change after you've been riding for a while.

^^^This is pretty much all that can be said. FWIW, I ride an 8.25, and Thunder trucks because I prefer their turning radius. Personally I like 'em a bit bigger, and weird lookin...check out Welcome Skateboards to get an idea

In my time (like 5-10 years ago), there were trucks made by a brand called Relic. These were a lot cheaper than Industrial (like half the price over here) and decent enough. I have a Si-Board. Ridiculously expensive but you can have some fun on it and it is an amazing workout. You can do pushups and planks and stuff like that on it to get an upper body workout too. I have the Si- Klone with the 8.5" ball. Just throwing this out there for folks who may be interested in a similar but different experience.

I skated from age 1990-2002 or so but it's one of the things that completely dropped off on the priorities list and I've barely touched as board in a decade - quite frankly, I don't think I would ever skate in public again because a) I hate kids especially teenagers b) the whole culture was shit by the time I got into it as a 10 year old and it's about 60x worse now and c) I'm an adult no thank you
All my friends dropped out of skating at the same time as I did..... I think it had something to do with girls. We used to go skate and then drink beer and listen to Slayer and fuckin' Heresy and DRI and shit like that.... we all got jobs and dating more "sophisticated" women....
I got this when I was 20 on my forearm.... it's right next to a Motorhead/ZZ Top tattoo that says BEER DRINKERS AND HELL RAISERS

My mother in law is selling her house and cleaning everything out and dropped off two old decks I had left in her basement, they're on my front porch if you want them.... just shoot me a PM. I'll like, trade for a Boss pedal or two sets of guitar strings....

I'm 21 and feel old as shit when I go to skate parks. Shouldn't stop you from skating, though! Just skate curbs if you don't like people or don't want to get hurt. Fill a two liter totally up with water and then wrap the whole bottle duct tape. Then just use any deck, sans hardware. Pretty fun.
I've been lusting after a new longboard for a little while. Stopped riding after I fractured the radial head in my elbow.

Yeah I have heard of people doing that. I also have an Indo Board which is much closer to what you described than my Si Board. I like my Si Board better as I am really into the fitness aspect of it as opposed to the tricks.
