You don't have to tell them Your band members age, don't You, so as long as You drink in the backstage and don't send the band minor to the counter You should be on the safe side. And don't let the bass player go to pizzerias nearby and come back too late when the doors are already open for the audience.
Alternately, honesty is sometimes best. You can talk about it with whoever does the booking at a venue.
If they like your band (and get along well with you) and your band has a decent draw, it doesn't much matter.
As long as your underage bandmates don't do anything stupid, like trying to drink at the venue or showing up for soundcheck already drunk or something, you should be fine. I guess you guys've got to prioritize. Do you wanna build a good relationship with venue bookers and get to play awesome shows or do wanna fuck around and have a good time (or possibly not such a good time)? If playing shows is important to you, fuck around on your own time and be semi-serious about the shows. You guys can party & bullshit anytime. Shows is fo' real.

Earth is playing a 21+ show in the ATL RIGHT before my 21st birthday. So fucking pissed. I am gonna find a way to get in there...
I usually don't have problems with people at 21+ venues, they just assume I'm old enough most of the time...But I usually play with a bunch of old people when I play out, so that may have something to do with it.
Bar shows can be awesome depending on the band. If it's a sleazy punk rock band a la The New York Dolls it can really add to the griminess of it all. Earth shows should be booked in crumbling buildings or something though...
The one time I've ever been burned by this was when a friend and I hooked ourselves up with press credentials to get in to a 21+ show.
Doorguy: "can I see your ID's?" Us: *hands ids* DG:"yeah, you're not old enough." "...but we're on the list?!" "yeah, but you're not old enough. Sorry."
It was bullshit.
However, 21+ shows are much, much easier to navigate from a venue perspective. Especially since the penalties for underage drinking at a venue are incredibly severe.
I've actually been ID'd at shows before. I was bringing gear in early, and the guy stopped me, after I'd already done two trips, despite the fact I was carrying my cab and said, "I'm going to need to see some identification proving your age sir." I got so pissed. I said I was playing, but he didn't care at all. I put my amp down, had to go through my wallet, find my license, and he asked if I had any other ID, and I said no. I'm lucky he let me in. (I have a beard, but no beard on my id.) Pretty sure he considered not letting me in.
