I love soup. I make it all the time. I don't use recipes.

Made some soup last night. Chicken, garlic, onions, white and yellow corn, mushrooms, white rice, stock, heavy cream, whole milk, kosher salt, pepper, celery salt, smoked paprika, oregano, crushed red pepper flakes.

Last weekend was chili. Ground beef, canned tomatoes, tomato paste, onions, green peppers, garlic, light and dark kidney beans, black beans, red beans, chili powder, homegrown cayenne, homegrown Caribbean red habanero powder, smoked paprika, cumin, kosher salt, pepper.

I'll have to take some pictures of my Thanksgiving soups this year, so you guys can drool over them. I do two every year, no recipes, and never repeat. They are meant to be true appetizers, so the servings are very small, the flavors are bold, and the presentation is usually excellent.

Last year, cold soup was a three-layer puree-- pumpkin spice, sweet potato maple, Granny Smith apple and acorn squash-- each layer separated with creme fraiche, served in a mini parfait glass, topped with creme fraiche and walnut dust. Hot soup was a creamy fire roasted corn soup, with a fire roasted red pepper puree, bacon chunks, and Parmesan tuilles. I have no idea how I am going to top that this year, especially when I make 12-15 dishes total, almost all from scratch.

But yeah, I freaking love soup.
