Yes FS have a manual setting. To my ears according to demos, they sound completly different. FS is more like a Whetstone with more control. SS doesn't swallow your volume and it's more like a push/pull effect to open/close your sound.

Agreed, they do sound dramatically different in demos. The FS sounds thick, gorgeous, and hugely variable.
SS has a very unique thing going on too, like no phasing sound I've heard before, interested to hear more.
