It has to do with the way that the game stores data and three independent factors: there are no Pokémon values on the left side of Cinnabar Island, talking to the Old Man stores the players name in the data buffer and turns the character's name into hexadecimal characters (which are accessed by the game when it is trying to find data for non-existent Pokémon on the side of Cinnabar Island), and the fact that if the hex value of the player's name is higher than the data allows (the 700th Pokémon out of 151, for example), it substitutes and error in the form of the name of the Pokémon (in this case, the error is MissingNo.). That's why the name of the glitch Pokémon can be different, and why the sprite is different depending on the character's name. It's also why MissingNo. has a blank cry (a blank cry is a male Nidorino cry with a pitch of 0 and no echo) and strange stats.
Yes, I am a nerd.
Now the Venomoth/Butterfree sprite switch theory I do find to be plausible, though...
I applaud you, sir.

the "MissingNo." placeholder does imply the removal of several pokemon. TIN FOIL HATS ON
http://bulbapedia.bulbagarden.net/wiki/List_of_Pok%C3%A9mon_by_index_number_(Generation_I)
The index numbers that correspond to actual pokemon go up to 190, but 39 were left blank or removed for an unknown reason. only those 39 index numbers (which are still formatted as valid pokemon, just with blanked out info) give you "missingno." and all of these have the same stats, moves, etc. as if they were all the same pokemon. anything over 191 results in scrambled text due to the game trying to change other types of data into a pokemon.
the missingnos are the other pokemon that were cut from the original line-up of 190 due to the space limit of the gb cart.
AND WE WILL NEVER KNOW HOW AWESOME THEY MIGHT HAVE BEEN.
