This is an adaptation of Alton Brown's The Chewy.

Ingredients
2 sticks unsalted butter
2 1/4 cups bread flour
1 teaspoon kosher salt
1 teaspoon baking soda
1/4 cup sugar
1 1/4 cups brown sugar
1 egg
1 egg yolk
2 tablespoons milk (almond milk works as a great substitute)
1 1/2 teaspoons vanilla extract
2 cups semisweet chocolate chips (Heath bar bits work as well)

Preheat your oven to 375 F, and melt that butter. When the butter is liquid, blend it with the brown sugar until you get the consistency you want. Have all of the other wet ingredients in a small bowl ready to add after mixing the butter and brown sugar. You'll also want your dry ingredients in their own bowl, somewhat mixed together. You will blend in your dry ingredients a little at a time until everything is mixed together. You'll then take two cups (which is a small bag) of semisweet chocolate chips and work those in with a large spoon. I use a small ice cream scoop to put the batter on a silpat mat and then into the oven. After 12-14 minutes, I take them out, slip the silpat mat out of the baking pan and onto a cooling rack to get awesome while I load the next batch. You can get about forty medium sized cookies with this recipe.

Bring this to a party or potluck, and the gauntlet will be thrown. :wizard:

i am reviving this thread to share the awesome and easy veggie burgers i just made. i suck at instructions.

2 portobello mushrooms
can of diced black olives
can of black beans
some bread crumbs (i just toasted 2 slices of sourdough to death.)
half a red pepper
2eggs
seasonings to taste

cut up the mushrooms, olives, pepper, and whatever other vegetables you've got up really fine. throw 'em in a pan, season (add some balsamic vinegar!) and saute them until they smell delicious. set the pan aside so they can cool a bit. drain the black beans really well, then mash them. they don't need to be a perfect paste or anything, but they help hold the burgers together, so keep that in mind. mix the semimashed beans and mushroomstuff in a bowl together. then add the remaining ingredients and combine everything well. form into patties and fry in a pan with olive oil until they're set.

they're even better than store bought veggie burgers imo.

Cooking thread, bitchin'!

Mike's super awesome chili recipe(serves 4-6):
1lb(that's right. Imperial, bitches!) ground beef
1 yellow onion
1/2 green pepper
1/2 red pepper
1 can black beans
Chili Powder (spiciness is at your discretion)
Cumin powder
Cayenne Pepper
a pinch of Garlic
Salt
Pepper

Dice onion and peppers. Heat up greased pan over med-high flame and begin browning meat. Add chili powder and cumin. When about half browned, add vegetables. Put beans in med-large sized pot and heat over medium flame. When meat is browned, remove from heat and put beef, veggie mix in pot with the beans. Add cayenne pepper, garlic, salt, pepper, and more chili, cumin powder to taste. Stir and set flame to low. Let simmer for at least 1/2 hour, but the longer the better. Enjoy!

I haven't made this in a while, so I may have forgotten something. This is the basic recipe and you can tweak it as desired. I'm not a very specific cook and have never really measured things or recorded exact measurements.

Motherfucking Lamb Chops.

Americans don't eat much lamb,...that's cause we are fat and stupid (I need a 96oz sirloin,...what's this dinky like 4 oz rib chop?)

I rub some cider vinegar and salt on the surface of the lamb just before searing in a medium hot cast iron skillet. 3 minutes both sides. Rib Chops are better than loin chops, which are basically like tiny t-bones. Rib chops are easier to handle while eating,...loin chops make you work for it.

Good with Garlic Mashed potatoes and blanched asparagus.

I also like Huevos Rancheros.

Pan Fry two corn tortillas in a little oil (make sure the pan is hot or the oil will soak into the tortillas),...drop two eggs in poaching water (around 175 degrees, I usually gingerly flip the egg after it's been in the water for about 10 seconds),...when torts are slightly crispy remove to oven safe plate and sprinkle with cotija cheese and spoon on some black beans sprinkled with cumin and place in a warm oven. When the cheese starts to color remove from oven and add the two poached eggs. Eggs should have a firm white but runny yokes. You can poach the eggs a little harder if you don't like em runny. Top with Pico (homemade fresh salsa) or store bought salsa and sliced Avocado.

Yoooooooo I'm enjoying this right now so I thoughts I posts its. It's a pretty basic smoothie, but it's super tasty and really good for your LOINS.

-frozen strawberries
-frozen blueberries
-frozen mango chunks
-vanilla almond milk

I do this stuff first, and mix it up as the like base of the damn thing. Then I add:

-half a banana (or a whole banana)
-handful of baby spinach leaves or other greens (maybe kale or chard)
-a tablespoon or two of ground flax seed

I work at Whole Foods, and it is there that I get the secret ingredient: 365 Organic Orange Peach Mango juice! You can add this (or whatever juice you'd like) at any point. It helps the shit blend, and it adds a lot of sweetness and vitamins and all dat.

Some peeps will cringe at the spinach, but you can't taste it AT ALL because of all the froots. The greens are just good to have, as is the flax seed for fiber.

Blends into a nice lavender color and tastes suuuuuuupah.

How about my special juicer drink???

Take the following items and throw them into a juicer to make a delicious drink.

1 beet
5 carrots
1 apple
1 pear
1 piece of ginger root (cut to the size you'd prefer. Remember ginger is very strong tasting. So if you don't like ginger...well...I don't know what to tell you).

Love this drink. Beet is kind of gritty tasting, so you can skin it if you like. I don't mind the grit taste, but some people hate it. Also, you cannot taste the beet over the other ingredients, which is a huge plus. This drink will make you feel energized and renewed.

A recipe my sister gave me over the weekend :)
Puff Pastry Fruit Tart
Ingredients:
1 sheet of store bought puff pastry dough
fruit spread or jam of your choice
thin sliced fruit of your choice (enough to cover the pastry)
sugar (optional)
1. Roll out one sheet of store bought puff pastry dough on a greased (or use cooking spray) cookie sheet. Don't press down the edges. If you do, it will not puff properly.
2. Take some (maybe 5 table spoons-depends on how much you want) of your any jam or fruit spread you like. Dilute it with a little hot water (about 2 tablespoon) to make it spread more easily. Leave about 1 inch of boarder without jam so that the pastry will have a nice puffy edge.
3. Place thin slices of fruit all over the jam. You can overlap the pieces of fruit like roof shingles. I think any fruit you like will do. We have done plums with apricot jam and peaches with peach preserves and those turned out very tasty.
4. Bake at the temperature recommended on the package of pastry (probably 200 degrees) for 30 minutes - until the edges are puffed and golden brown.
5. If you like your fruit really sweet you can sprinkle the assembled tart with some granulated sugar.
Serve it hot with vanilla ice cream!

i started making this awesome fritatta/ omelet thing

take some basil, cherry tomatoes, red onions, and black olives (however much you want of each)
cut them up into small bits
take two egg whites and add a quarter cup of milk and mix well, make sure the eggs are broken up well
pour all of the vegetables into the egg and milk mixture, then mix that stuff well
Pour enough olive oil in a rounded pan skillet to cover the bottom and sides
add the egg/ vegetable mixture and let cook for a few minutes
add some feta or goat cheese and let it melt- only if you want, this is optional

and thats it. its good and very healthy, nothing bad for you in there, egg whites= pure protein. enjoy!

Klaus Nomi's lime tart recipe! :joy:
(more like :!!!: )

Crust:
1¼ cups fine graham cracker crumbs
1/3 cup brown sugar
¼ cup melted butter

Filling:
4 egg yolks
1 can sweetened condensed milk
½ cup lime juice

Pour crumbs into a bowl and mix with melted butter. Blend ingredients with your fingers until uniform.
Press firmly into 9-inch pie pan.
Beat the egg yolks. Add milk and beat. Pour in lime juice and beat until it thickens like pudding. Beat egg whites until really, really stiff and fold into the above mixture. Pour into pie pan. Garnish with thin strips of lime zest.
No baking necessary! Put directly into refrigerator. Ideally leave overnight.

---The lime does some magical neutralizing thing with the eggs so it's safe to eat, don't worry. You may or may not want to modify this recipe a little bit because every time I've made it, it has turned out fairly rich. I can't eat a very big slice.---

Definitely going to be trying this one. Also, what cookbooks do you all enjoy? I own a few, but lately I've been using Hellbent For Cooking the most. Every recipe has a big picture, a funny anecdote, and information on the band who submitted it. It's pretty neat. :snax:

I really like Alton Brown's first two. I'm Just Here for the Food and I'm Just Here for More Food (which is the baking book).

He puts in recipes but the books themselves are almost like layman's textbooks. They literally teach you how to cook and you can completely ignore the recipes,...improvise and still make a good meal.
