recipe list
ok so i really love to cook. i make meals for my girlfriend and myself daily and do larger batches of stuff for lunch, snacking, side dish, etc. maybe once or twice a week.
i don't really consider myself to be all that great at it, but i/we almost always enjoy the food...
i figured it would be nice to have a recipe list up here. i'll start it off with something simple and super tasty that i made this morning.
tat soi omelette
2-3 egg whites
the bottom stalks of a bunch of tat soi, chopped small(bok choy or mustard greens can be substituted)
a small handful of cherry or grape tomatoes, sliced in half
a small handful of dill, ripped apart
2-3 cherry peppers, thinly sliced with the seeds left on
2-3 decent sized but thin slices of mature gouda cheese
about 1/2 tbsp of paprika
salt and pepper to taste
prep all the veggies and place them in a large pan with about a tablespoon of olive oil on a medium-high heat. let them sit and sizzle while you prep the egg whites, slice the cheese, etc. toss on the paprika, salt and pepper after the tat soi stalks start to look browned and wilt-y then pour the egg whites over the vegetables - they should just cover the veggies when thinly spread out in the pan. add the cheese after about 2 minutes on one side and fold over - the bottom should be slightly burned. move the omelette a little so it doesn't stick, lower the heat and let sit for another 2 minutes or so - flip if necessary. remove when you think it looks good! the outside should be a bit burned and crispy and the inside should be a bit soft.
serve with a nice slice of brown bread and butter or fig preserves.

Oooh that smoothie sounds good

Chevre Brownies- dont be turned off by the idea of cheese in a brownie, i promise they are amazing.
when i made them i poured half of the brownie batter in, then poured all of the goat cheese mixture, then the rest of the brownie batter so it was layered instead of swirled.

Ingredients:
-6 ounces chevre, room temperature
-1 tablespoon powdered sugar
-1 large egg
-1 tablespoon all purpose flour
Brownie Base
-2/3 cup Dutch process cocoa powder
-3/4 cup brown sugar
-3/4 cup powdered sugar
-3/4 teaspoon finely ground sea salt
-1 cup all purpose flour
-1 cup semisweet chocolate chips or dark chocolate chunks
-3 large eggs
-1/2 cup canola oil
-2 tablespoons water
-1 teaspoon chocolate extract, optional
-1 teaspoon good quality vanilla extract
-1/4 teaspoon medium ground sea salt, optional (I used my salt grinder to get something between a fine powder and the larger crystals)
Method:
Preheat oven to 350 degrees F. Lightly grease an 8×8″ square nonstick baking pan.
Make swirl by beating together the first four ingredients until smooth and well combined. Set aside.
Make the brownie base by whisking together the cocoa, sugars, salt, flour, and chips in a large mixing bowl. Add the eggs, oil, and water and extracts. mixing just until smooth.
Spoon half the brownie batter into the prepared pan. Spread the swirl mixture over it and then spoon the rest of the brownie batter on top. Swirl the two mixtures together with a knife if desired. Sprinkle with coarsely ground sea salt if using.
Bake the brownies for about 35 minutes to 45 minutes (for the 8″ pan). To see if the brownies are done, remove the pan from the oven, and stick the tip of a sharp knife into the center of the brownies. Brownies will be done when the center is set but the consistency is still moist and fudgey. I usually prick more than one area to ensure I haven’t gotten a chocolate chip or chunk. You also definitely DO NOT want to overbake these as you’ll lose the fudginess of the texture so I watch these carefully.

A Fast Curry...
Onion... as much as you want...
2 carrots
a bell pepper
a zucchini
A lot of garlic
2 potatoes
1 can coconut milk
Chop stuff
saute in a lot of butter: onion, carrots, bell, zucc and garlic till onions start to turn translucent. Put in about 1.5 to 2+ TBL curry power, 1 TSP garam masala and .5 TSP cumin. Continue sauteing intill it really starts to stick... ad a TBL of flour continue sauteing for about a minute.
While you are doing that: cook the potatoes in intill fork tender, but not too tender... just so is good.
Once you mix in four and continue sauteing for about a minute add can of can coconut milk and then fill the can almost all the way with water and add that as well, add potatoes, stir! cook for about 15 minutes. eat over rice or noodles.

That reminds me of something I saw on TV once..there's a candy store somewhere (have no idea where) that sells caramel-filled brownies..but the caramel is fairly heavily salted..I guess it's kinda playing off of the sweet/salty combination.
