Re: Vegetarians...
Hai!
Most recipe sites have veggie sections.
Today I made some badass vegan fajitas. Just saute some veggies (bell pepper, other peppers, onions, whatever you want) in olive oil, and add spices (cumin, various peppers, garlic, etc), and cook a can of black beans with the same spices, slap it all on a tortilla (check for lard in the ingredients-- the ones I used didn't have any obvious animal product), and nom.
That's my usual cheap and easy dish. Others are fried rice, rice and beans, spaghetti (with lots of veggies in the sauce), and just raw fruit and veggies.
It's not hard to do, but you'll wanna shop in the nicer part of town if you go to the supermarket for food. They tend to have better produce and more vegetarian options. I'd like to go to Whole Foods, but it's a 30 minute drive away. There's a smaller, local shop closer, but not by much. And one of the guys that works there is so hot it's intimidating.

Re: Vegetarians...
I'm vegetarian friendly which is to say that I eat meat,...but I don't require it to consider a dish good.
I work at a cafe that has several great vegetarian dishes, mostly cold salads. I can't give you amounts or recipes off the top of my head but can point you in the right direction of things you may not have tried.
Look into Mango Couscous with golden raisins, jalapenos and tomatoes.
Wheatberry salad with fresh squeezed orange juice, orange zest, tarragon, rosemary and raspberry vinaigrette (boil the shit out of those wheatberries).
Tabbouleh with cucumber, tomatoes, and fresh mint.
If you don't mind egg you could probably go with a simple tofu stir-fry with yaki/egg noodles (use rice stick aka Maifun if you aren't into eggs). Boil the egg noodles,...shouldn't take too long. Cut up some red and yellow bell peppers, green onions and blanched asparagus...Saute some tofu with orange juice and orange zest. Caramelize some Mae Ploy sweet chili sauce with the tofu (try to get it brown and somewhat crunchy,...like candy). Let the tofu and noodles cool. Toss everything with some more Mae Ploy,.....BAM!!!!
Of course the no brainers are Falafel,...hummus,...pita,...salads,...beans,...peanut butter,...salsa,...chips,...
Check out veggie burritos with sunflower seeds.
Potato Salad (use Vegenaise if you aren't into eggs).

I've been a vegetarian for like ten years.
Yes as said most sites has recipes that are ok if not good. Most things can be un-meated. plus there are a lot of good books now. Almost all asian can be made vege, traditional Indian should be all vegetarian, so if you like curry... mmmmm cuurrrryyy

I order that all the time... Also one of the more easy ones to pull off. One of the better books on indian veggi food is The Healing Cuisine By Harish Johari.

I'm vegetarian friendly. I don't love meat.
but I'd bored of food without some meat thrown in. like I needs chicken in my salad. I could easily get over chicken and beef by eating more crab, squid, shrimp.
hardcore vegetarians that preach being vegetarian like it's a religion scare me. why be so passionate about what other people are eating? eat what you want, yo! but I don't want to accept veggie jesus.

You know, I've heard about those people but have never once met one. I know about the PETA protests and stuff, but still-- very small population.
I have, however, gotten a lot of shit about being a vegetarian.
