Whoa. This is such a dumbass realization, but whenever I've seen someone doing that, I thought they were just tapping the harmonic with their index finger—I couldn't ever see the thumb plucking the note behind the index. Two great videos! I've been doing the first one for a while playing artificial harmonics but nowhere near that cleanly.
The Mattias Ekhlund technique had just never occurred to me, and he's incredibly good at hitting the in-between fret harmonics.
