400 brunches down a man today. Probably 200 dinners down a man over the next 6 hours. I'm washing dishes tonight because our dishie is sick. Genuine flu. Sucks.

I'll be calling tickets and washing plates until 9pm. Already half drunk because this morning was a legit slaughter. At least we are closed tomorrow.

Got another executive chef offer at a restaurant that I'm doing a tasting for on Wednesday. Almost twice as much work/money. Hope it goes well because my current job is starting to stale. Year and a half, time to go crush it somewhere else.

If we get killed tonight I'll update. If we don't I'll just get wasted and go to bed after work.

Sorry broham. I have some friend so who are cooks in varying capacities. Shit is nuts. People will always be people and decide not to show up to work. Good on you for doing triple duty trying to keep the kitchen running smooth.

I miss out on all that shit these days. I have managed a hospital kitchen for the last 10 years. None of the ,drugs/booze, fun, cute girls, way more stress due to crazy diets ,compromised immune systems, and arbitrary hiring/spending freezes.. Hours are way better though. Only do about 300- 350 plates a day. Our population is mostly elderly and NPO.
