I'm gonna confit a bunch of tuna tomorrow and do a fancy yellowfin sandwich with curry aioli and asparagus for lunch because I have a million pounds of asparagus by accident and I wanna do it.

Also maybe charred asparagus w a bacon fat hollandaise and a poached egg for lunch too because why the fuck not.

Imma add a fried soft shell crab to the asparagus and hollandaise because they're kinda cheap today from the dude I get crabs from.

Also, I kinda fucking hate to do this, but I think I'll have to apply for kitchen jobs. It'll prolly be ok, as long as I know it's only temporarily.

My youngest kid ate six or seven stalks of asparagus the other day. She's one and a half. The diaper the next morning absolutely enraged me.

Me and my dudes got slaughtered tonight. Means summer is here. Non stop gunning all night, 300 dinners after doing 250 breakfast. Tomorrow a shit head I yelled at for being lazy and messy probably isn't going to show up, so I'll be down a line cook for 300 brunch. I will work the line and expedite (call all the orders out while cooking).

Then we get to do another few hundred people for dinner. I don't know when I'm going to get all of this prep done. I don't know if all of our orders from our purveyors will be corrrct.

Summer is why I do this job. It's insane. It's stressful. It's fun.

I made pasta and aioli at the same time tonight in 15 minutes while I called out tickets to the boys because it was busier than expected.

We did not run out of anything b sides ribeye.

That's all.
