The secret:

Low temp.

Take your time and let that cheese really melt all good-like.

Wheat bread all day. Its hearty and adds a mild sweetness that I really like. I like non standard cheeses, too. Havarti is delicious.

Also I must disagree with you on this one, 'Tane. I love me some ham on my grilled cheese.

my wife makes home made bread. it turns out great.

butter on the outsides. dijon mustard on the inside.

i usually cook it on a george foreman grill because it cooks both at the same time.

make this soup with it: http://www.budgetbytes.com/2013/09/tomato-herb-soup/

Partially toast one side of two pieces of bread in a skillet with butter.
Flip one, put cheddar cheese on, then put the second bread on top.
The residual heat starts melting the cheese while the other sides toast.
After each side is toasted, add more butter.
Throw shredded cheddar cheese into the skillet and put the sandwich on top.
The cheese will get crispy and coat the outside of your sandwich.
The cheese is kinda like what's on the edges of the crust of a pizza.
Do this on both sides.

You end up with:
Crispy cheese
Toast
Cheese
Toast
Crispy cheese

You dip it in mustard, dickbags.
But if you add anything other than cheese, it's not longer a grilled cheese, it's a fuckin melt.
