got a batch of tomatoes from my in-laws last night that were pretty soft
cooked them the way I would for a sauce and ran em through my food mill
the texture wasn't there, so I cooked em down into some dang sweet ketchup
Anyone ever make their own ketchup?
Other sauces?
How do you package them?
Right now I am planning on asking all my friends to bring their own container and I will fill it with ketchup.
Thoughts?
please don't make me join a canning forum

That's awesome. My wife has done a little bit of canning for pasta sauce, but nothing major. My dad did MAJOR canning for a while, pasta sauces, pickles, and I believe pickeled eggs. He got really serious into it for a while and even pressure sealed lids for a huge batch of stuff that he did. Was pretty neat except for the one weak jar that exploded

yeah my parents canned, and my garden has been awesome this year
we have a huge freezer in the basement so freezing stuff is easier
some things you just have to can
we did blueberry jam last week, because of the acid and the high heat we used we could just use a regular canning setup
for alot of this stuff I do need a pressure canner
does this place need me?

yeah, I don't think I can handle it
Someone else on here has to can
the garden is the best
We ate fresh green beans about 3 nights a week for the last month
plus I did kale and it seems to regrow, so I have some frozen and am still eating fresh
and I did golden tomatoes this year which are friggen awesome
habeneros struggle here because of the rain but I got a few
and enough tomatillos to rock some salsas

If garden space wasn't at a premium the tomatoes wouldn't have been pulled and we would have to think about canning and ketchup.
Never made my own. I gather that I really should look into home-made mustard, which I gather is super easy. Already have mortar and pestle for the grainy stuff.

Oooooo... I love a good funky mustard. Never tried to make my own before! Interesting.
I have friends who are way into canning. They have, like, canning parties and stuff. I've never tried it, myself, though I do love it when someone gives me their home-canned goods as a gift. Mmmmmmmmmmmm deliciousness.

Make me some spicy-ass ketchup. Don't put any stupid sugar in it, though.
