I haven't even thought about dinner yet.....so I am guessing with will be a bowl of kix and a diet root beer.

Yeah I know,
I may make a late dinner but no time and I don't have anything defrosted
Last night I had steak and creamed spinach with a side of Pasta: Whole Wheat pene in a basil sauce
Might make a nice carbanara around 10pm

I do that far too much - the late ass dinner. At least twice a week I don't eat dinner until 12am. The rest of the week it's anywhere between 8pm and 11pm.
Had dinner last night at this cafe near my apartment around 11pm or so. "A casserole of macaroni mixed with a homemade sauce of romano cheese, cheddar cheese and finely diced onions. Baked in the oven and topped with gruyere cheese and Ritz cracker crumbs." With tabasco and sriracha on the side. Amazing.

You lost me with the Tabasco, I love hot sauce on just about everything but I really hate Tabasco: It's a lesser sauce

It's what they have there. Tabasco and Sriracha. I'm not so hardcore that I'm going to bring a bottle of hot sauce with me to the place.

Sundried Tomato & Feta Stuffed Tortellini in an Olive Oil Dressing with Mozzerella and Boiled Green Veg (Broccoli, Sugar Snap Peas & Asparagus) is what I had tonight...
You can probably buy stuffed Tortellini if you can't be assed to do it fresh... probably cut down cooking and prep time to a max of 15 minutes... 5 if you don't hang about.
Other ideas... Stir Fry some Veg in Soy Sauce & Balsamic Vingegar to make a really quick Sweet and Sour Dish... stick some 5 spice or something in there... use your imagination.
Risotto? Massive Cous Cous salad with Feta or Goats Cheese? Grilled Halloumi Kebabs with Pineapple and Peppers? Buy some premade pastry and make a Tart?

Hamburger Helper and a salad as an attempt at countering it.

i like not-boring salads a lot in the summer. it's too hot for me to be bothered making much else. try this: mix fava beans (or whatever you want i guess. try edamame or lima beans?), feta cheese, good black olives, diced or shredded cucumber and tomato together with some fresh herbs, balsamic vinegar and olive oil.
