The sandwich place near work had really bland chunky vegetable soup today. I added Frank's and shit got good.

I reupped on locally baked Italian bread from around the block so I had yummy grilled cheese for dinner.

Whole wheat, American pseudo-cheese, Progresso chicken noodle soup for dips, kosher dill spear, and an I.B.C. root beer. Also, ketchup on mac n' cheese is pretty good. My uncle turned me onto it when I was a wee ghost

Had homemade vegan grilled cheese the other night. Made it with cashews soaked in water overnight, then blended with shallots, roasted garlic, miso, roasted red peppers, nutritional yeast, cornstarch, and some herbs. Then you cook the mixure till it thickens, refrigerate, spread that shit on some sourdough, fry it up, and HOT DAMN.

I guess I'm the weird one, but I can't fucking stand American "cheese".
When I want a grilled cheese, it's either sourdough or rye bread. I butter the shit out of the one piece and start toasting it in a pan. And then I put on the cheese. It's some concoction of cheeses usually limited by what is in the cheese section of my local foodstore. Colby, cheddar, gruyere, fontina, gouda, whatever. I usually buy 2 or 3 types at a time. I shred all of the cheese into a big fucking pile and put it on the bread. Once it starts melting around the edge, I put the second piece on top, pinch the sides a bit so the cheese doesn't all pour out, and flip it, with another fuckload of butter. By the time the second side is toasted, the cheese is mostly melted, and the rest will melt by the time I get it to the table.
Awesome with tomato soup, or with hot sauce, or just by its own fucking awesome self. Meat inside is ok, but when I'm in the mood for cheese, I just want fucking cheese. Get the fuck out of here with adding tomatoes inside. Ketchup seems weird to me, but I'm not gonna knock it since I've never tried it.
Goddamn I'm hungry now.

I cant eat cheese anymore cause it turns my stomach into a warzone. And vegan store bought cheese substitutes are fucking expensive. So I learned how to DIY that shit. Takes time, but it makes a bunch.
This same stuff can be used to make mac and cheese, and if you change a couple ingedients, it makes a kick ass queso dip.
