Personally, I would stop seeing your fuck buddy the minute a "yes" on the dinner is given. Go to dinner, see how it goes, if you're still interested in her keep staying away from your buddy. Unless she says something like "we can still see other people" or whatever. I feel like that would keep you in a good position if things turn serious later on.

Personal bias: one of my ex-girlfriends held a bit of a grudge against me that I fooled around with someone else before we "officially" started dating but while I was seeing her. & it was kind of a shitty position to try and defend, so I'd just try to avoid that. But you know, different people, different opinions, etc.

fuck that, no pun intended. you don't owe a possible dinner date anything at all. don't let women run your life before you even go out with them. as a matter of fact, if you let yourself get roped into an exclusive relationship so soon after your split you're a fool.
