has a lot of cures and info to start you on your journey.
Local chinese markets usually carry pork belly for fucking CHEAP so that's a good place to start.
If you're lucky try and go through your local butcher if you happen to have one nearby and get some QUALITY-ASS pork belly.
or if you're like me and work in the food industry you can just ask your supplier to send you some for fucking CHEAAAAP whole sale prices.
but yes, get that book if you're really into it.

Bacon as a standalone gives my tastebuds a boner. Down here,we use bacon as a seasoning. Collard greens(sometimes bacon is replaced by hamhocks or fatback),black eyed peas,butter beans(yankees call 'em lima beans),all are sweetened with the swine. Also,bacon with maple syrup on it is Fuck this,I'm going to Denny's
