Also, Wick, you should send me your recipe for Shepherd's pie in a skillet, cause that sounds stupid delicious, and I have a great cast-iron skillet for that.

I'm a huge fan of Shepard's Pie,...but sourcing good ground lamb is difficult around here so I just use ground beef. It's basically Beef Stew made in a skillet with a layer of Mashed Potatoes on top then baked. I've made this a few times to entertain friends. One I made in a 6qt Dutch Oven and fed about 10 people that came over to help me split wood and it was gone. The I made one in A 12inch Skillet,...fed four people,...scarfed....

The mint and pea is so easy, literally all i'd do is boil a large amount of frozen peas (more peas = thicker obv) in vegetable stock (sure chicken would work fine but i'm a veggie) add dried mint as I found it worked better and had a subtler flavour and blend it, you could add something like spinach or rocket for a greener finish and a slight pep and some sort of cream based product would work nicely but I found it had a creamy texture anyway due to the peas natural texture, bit of crouton or garlic bread and some seasoning, really nice. You can make it in 8 minutes including kettle boiling and blending and while it sounds bland and boring it just works.
I remember being at my sisters once when all she had was carrots, I made a soup with concentrated orange juice and ground ginger, worked out really nicely, the ground corriander added a great depth compared to fresh and the orange juice brought up the flavour with some acidity, it wasn't the way i'd usually make it but it came out nicely.
And fucking love shepards pie, my oven has been broken all year though so I don't get to make it, part of the fun of being a veggie was always altering the base from the usual beef, although veggie beef (not that fucking quorn shit by the way, stuff that as someone who remembers the taste and texture of meat can work nicely) in there is still delicious.

Maybe it was just anxiety, but I thought today was going to suck, but it turned out to be bearable. Hooray for putting things off until later!
