I love spicy foods and have been making my own hot sauce for the last couple years. Primarily cayenne and tabasco so far, but probably going to kick it up a notch and try a new hotter pepper next year, not sure which one yet. I actually find that I don't like habaneros. It's not the burn that bothers me, but that weird citrus-y taste. I want to find another pepper around the same heat level as habanero, but with a drier, smokier, less citrusy flavor.

i should find guajillo chiles. never had 'em, heat par w/ jalapenos.

Hot wings are my jam. The hotter, the better, but I only dig it if the hot sauce actually has a taste of the pepper itself. Too many hot sauces are just nothing but heat, and that isn't enjoyable. But there's some great sauces that have great, unique flavours accompanied by heat.Wings are a bit of a lottery, depending on where you go. I prefer to make my own, so I know what I'm lathering them in.
I also love a fiery chili. Massive chunks of braising steak, slowcooked all goddamn day with a cocktail of chilis so it just falls apart when it's ready.
Strangely, I don't enjoy hot curry. I tend to go for a milder tomato or cream based curry rather than the burn-your-bollocks-off hot. I keep trying a hot curry, but I've never had one that I liked. The mild, creamy curries - the kind you will get laughed at for having by your hard, manly mates - tend to be the most flavourful. So, I usually get one of those. Fuck the police.

I've used them a ton, but they're really not that hot. They do taste amazing, though.
I tried to look just now and couldn't find an answer, but I wonder if guajillos are the dried name and go by another for fresh, like anchos (dried poblanos) and chipotles (dried/smoked jalapenos). I've only ever seen guajillos in dried form.
The good news is they're pretty much the most commonly available dried peppers in the Mexican section of grocery stores, alongside usually anchos and arbol, maybe pasillas. Cut em open and empty the seeds, toast the peppers in a dry pan for a couple mins, soak em for like half an hour in warm water, then buzz em up in a blender with roasted tomatillos and garlic. Pair with everything. Life will be improved.

Can also do the same through the dry toasting part, but then buzz em in a small coffee grinder into your own chile powder. Best shit ever.

far as the par that's just where they both are on the scale. i'd want to find fresh ones, not dried. wonder if there is another name, will have to read up...

I was making curry, but I didn't realize I only had a tiny bit of curry powder left!
I had chili powder and all sorts of other shizzz (also had habaneros in that shit to begin with).

Turns out guajillos go by the same name fresh and dried. What little I found about the fresh ones was just from people growing their own. They must be hotter fresh! Dried they're kind of raisin-y, can make a super complex tasting salsa but generally pretty mild. Maybe I'll grow some and check em out...
Fun side note--one thing that's cool about living in Austin is that sometimes I'll find chile piquins growing wild in my yard. Now those fuckers will light your ass on fire!

That's cool! I tried to grow some chillies this year but didn't get much of a crop, the weather isn't exactly suited to it.. I do have friends that grow great chillies though, so I'm sure I can learn

Yeah, they tend to want a lot of direct sunlight, so maybe for you it's just about finding the ideal spot in the summer. Does it get fairly warm and sunny there that time of year? I know it can be pretty grey otherwise.

Yeah, I found a pretty good spot this summer but it wasn't enough! Possibly still too cold as the window insulation isn't that good.
It gets warmish sometimes but not really chili weather, people get good results on windowsills and greenhouses though.

So I love spice food but for like a year, every single god damn time, I get the worst fucking hiccups. I have no idea what to do about this.
