Head Chef switched to a Fall Menu at work which means I get to learn how to make a bunch of new and awesome stuff.

Shittake Flan? Yup
Grilled Octopus? Yup
Smoked Trout Tartines? Yup

Also means I don't have to bread and fry cheese and vegetables which makes me a very happy camper.

he also might be "chef" - an überfat indian guy in tank top dirty from all the oil and grease smoking cigarettes like eating candy, putting them off to our burgers and fries... and grilled octopusses...

dude... he has a "big boss chef guy" that changes their menu to a "fall menu"- sounds like some 5 star/expensive as shit dining place all fancy with oysters and stuff... :lol:

I'm a pantry cook which means I do a lot of baking and prep,...and I make and plate Appetizers, Salads and Deserts. I do wear a white coat but I do not (nor does anyone else) wear a toque (chef's hat). The restaurant I work at is one of the most respected in the area,...so it's a high standard to live up to but I get to inject a little bit of my own style and get artsy with the plating, which is pretty cool. I hesitate to call it five star but a lot of stuff we make is in house like the vinaigrettes and the biscotti, crackers, soups, stocks, sauces, aioli, ice creams, deserts, etc etc etc.

It's a pretty laid back kitchen and the head chef is a badass while not being a head case. It's definitely a lot different then I'm used to as I have mainly deli experience,...but everyone there is experience based as opposed to education based. I fit in cause of my work ethic matches or exceeds my co-worker's and I have apparently impressed enough to get a raise after two months working there.

the septic-system service dude finally made it out after a week of uncertainty and worry about whether the system was fucked or the alarm was merely defective; after repairs to the alarm which cost more than i can entirely afford but were still bearable i can now do laundry, wash dishes, etc. again. this allows me to get things somewhat sorted for Friday, when Kim and her movers are scheduled to come take her things away. but more importantly it allows me to get un-stuck from the place where i've been, where all i could do was helplessly watch shit pile up in an environment out of my control.

so today i got to a point where everything seemed to be falling apart and i dug myself into a huge hole financially, but tonight i got as of right now a bar backing job at the bar on my street, i go for training Friday night, and if all goes well i will be working Mondays and Fridays, and making about 120 a week, compared to my current salary of 120 every two weeks(fuck on campus jobs). i still feel bad kinda cause i am getting the job cause a kid i know just broke up with his girlfriend as soon as he started the job and called out of work and just couldn't do it, i feel bad, but im still so happy to maybe be able to get out of this hole and get things back together sooner and without all the problems i would have before this. karma worked out for me this time :)

Holy crap, I just shimmed the neck of my frankenbass and the action is the lowest it's ever had. I can't adjust the truss rod anymore without a special tool...I think the nut is stripped. But this makes up for it.

Time to have some more FUN tightening/loosening the strings about a thousand times in order to intonate its Ric bridge :joy:
