As for recipes, wouldn't it be great if there was, like, a worldwide network of computers, almost a web of sorts, where you could look stuff like that up? :lol:

OK, so here's my variant of Henderson's Vegetarian Haggis (Hendersons is in Edinburgh, but otherwise it's great)
It's a PitA to make, but a lot less so than boiling a pig's lungs in boiling water for a day to make sure you siphon off all the black goo out the trachea.

50g kidney beans, soaked overnight, cooked, chopped (or 200g canned, drained)
75g brown lentils, soaked for a few hours
50g pinhead/steel cut oatmeal, soaked for 1 hour <---most important ingredient; not the flaky easy cook stuff
1 tbsp olive (or peanut) oil
150g onions (1-2 medium), finely chopped
2 cloves garlic, finely chopped
150g carrots (1-2 medium), grated
50g mushrooms, finely chopped
50g roasted chestnuts (or mixed nuts if you can't be bothered, but the chestnuts are best), finely chopped
⅓ cup water or veg stock (spoon of marmite in hot water is good too)
50g butter / marg / vegetable suet
1 tbsp shoyu
½ - 1 tsp garam masala
2 tbs. chopped mixed fresh herbs
pinch of grated nutmeg
juice of 1 lime
salt & pepper
Rosemary, thyme
Wee dash of whisky close to the end

The most time-consuming part is all the soaking and chopping. Shelling the chestnuts takes forever.
Heat oil in a big deep iron skillet or a wok.
Fry the onions, carrots and garlic until soft (~5-10 minutes).
Add the lentils, garam masala, shoyu and water (or stock).
Simmer for about 20 min or until lentils are soft and water has been absorbed. Stir often to stop it burning and sticking.
Add mushrooms and cook a few minutes til soft.
Add chestnuts and cook a few minutes.
Add kidney beans and butter/margarine and cook another minute.
Finally add oatmeal and cook until heated through. The oatmeal should keep some texture.
You can chuck an egg or two in if you like, but it's really not necessary.

I usually bung that lot into a greased loaf tin and finish it off by baking for ~45 min at 190C (375F).

Serve hot with clapshot (neeps and tatties) and onion gravy.

gravy is just finely chopped onions, sauteed til soft with some fresh chopped rosemary.
Stir some marmite into boiling water.
Chuck some flour into the onions, then slowly add the marmite/water mix. Stir and cook over low heat til it thickens.


No lips, no assholes, no guts or lungs and no faces peering up at you from the oven.

Here's a Tofurkey -- I make this at new year and for thanksgiving and stuff like that.

Tofukey:
~2 kg of firm tofu (4 or 5 standard packs)
one pack of smoked tofu

Stuffing:
2 tablespoons toasted sesame oil
1 large onion, chopped fine
1 and 1/3 cup celery, diced (about 4 stalks)
3 to 4 cloves garlic, minced
big wadge of sage
some marjoram
some thyme
some rosemary
handful of ground flax seed
handful of wheatgerm
handful of breadcrumbs / cubed dry bread
salt and pepper
1/4 cup shoyu
Cup or so of veggie/mushroom stock

Basting mixture:
1/2 cup toasted sesame oil
1/4 to 1/3 cup shoyu
2 tablespoons miso
2 tablespoons orange juice
1 teaspoon mustard


Mash all the tofu together (I squish it with my hands--gets your nails really clean;).
Bundle the mashed tofu onto a piece of cheesecloth or muslin til it looks like Dick Whittington's hankie.
Form it into a ball and squeeze as much water out as you can by turning the ball of tofu while holding onto the ends of the cloth bundle.
Chuck it into a big colander, put a plate on top, and put a weight on top of that (I use a big storage jar of rice or beans or sthg that will sit nicely in the colander. Place the whole thing in a large bowl because it will leak (which is the whole point -- get as much of the water out as poss).
Refrigerate and let sit for 2 to 3 hours. This year, I stuck it outside rather than filling up the fridge.

Stuffing:
Saute onions, celery, mushrooms in sesame oil.
When soft, add garlic and the rest of the stuffing ingredients except the breadcrumbs; mix well.
Stir and cook for ~5 min.
Add breadcrumbs and mix well.
Add the cup or so of stock to wet it -- you don't want it to be runny, just moist

Take the tofu ball out of the cloth and put into a bowl. Hollow it out to within ~1 inch of the sides and bottom (keep the stuff you dig out). Brush inside with shoyu.
Pack the stuffing inside the shell, cover with the remaining tofu and pat down firmly.
Turn stuffed tofu onto a greased baking sheet, flat side down.

Mix up the basting mixture and baste tofurkey with half of it.
Cover with foil, and bake at 200^C / 400F for about 1 h.
Remove foil, baste with remaining mixture and return to oven for 45 min-ish until it looks done on the outside.

It's actually better the next day, reheated gently covered in the oven.

No gizzards, no beak, no beady eyes, no thawing for 12 hr, no bird flu, no Salmonella.
Tastes great, and the leftovers go in sandwiches just like bird bits.

Do you know how much shit have to hear all the fucking time about me being a vegetarian? It never ends :mad: I don't say shit intill I am annoyed to do so which usually gets me to try and convince them that they should eat their pets, by the way you should if you have any eat your pets :thumb:

Check out Food Inc. if you want to see why going vegetarian is a good idea, or at least treating veggies as the main portion of the dish and meat as the side. I still eat meat but I have decided to start buying from local farms that I can see how the animals are treated and fed. Vegetarian is not necessarily good for you if the veggies you are eating are genetically modified and shipped half a world away. That being said many recipe sites have good vegetarian recipes. I have found a few different curries (search for a sweet potato and collard green curry its amazing), another Indian dish that is delicious is korma. Vegetarian sushi is real easy to make, as well as tacos and pasta dishes. A real easy [asta dish is:

1 box pasta
3 medium tomatoes diced
1 medium onion chopped
several cloves of garlic

Boil pasta
Sauté onions and garlic till soft enough to bring out the sweetness
when pasta is cooked add raw tomatoes olive oil and onion garlic mixture. Adding olives and pepproncini is really good to. Use good kalamata olives though, not green olives with pimentos.

I knew that conditions were bad, but not like what I saw. I also realize that it was an impartial documentary that was going to skew everything to one side. I was more turned on by the "locavore" aspect of it. After watching it we found a farmshare and also several sustainable farms raising organic grass and grain fed animals. I love stuff that is bad for me too, but I no longer eat the meat from a grocery store, I just don't trust it. That is not to say that you have to do what I do. I don't like getting all preachy about food stuffs generally, people tend to get offended about it for no reason. If you know the information out there and still make the same decisions, that is fine, this is a vegetarian thread however so I though I would share my opinion.

Sweet. My grandmother is Slovakian, and her sisters, The Crazy Aunties, would always make pierogies on New Year's Day, except they would just boil them and not fry them up. I like to boil mine slightly (if they are frozen; I've made my own ONCE, and it took four hours), then get like a whole tablespoon of butter into a pan and fry that ass until crunchy. Then you get some soured cream and this:
