Which is grilled cheese, ain't it? Okay, I've been known to use yeasted bread, too, but this is on the mind because I can't easily get hands on asadero and hatch chilis here, and I have to make my own salsa for it to be any good. I swear, the stuff they sell here is like chunky ketchup. No, worse. Like chunky catsup.

restaurant around here that does a caramelized onions with ham, apple and mustard. it's awesome.

Not sure why I missed this thread...

I make ridiculously good grilled cheeses. My own prefs vary, I never really make the same sandwich twice...
Whole grain calandra or ciabatta bread from a bakery. Thickness of slice varies due to the moisture content, I gotta do it by feel.
Usually generous mayo (not butter) on the outside, light dijon on the inside. Some thinly sliced red onion, pickles or tomato if in season.
Fav cheeses are 6 month VT cheddar, cream havarti, munster, deli American...but I usually make them with deli pepper jack, and rarely mix cheese types.

I'll eat it with a mug of tomato basil or roasted red pepper soup...or a little side of whatever leftover sauce I have to use up. Fra Diavlo is legendary :drool:
