By request:

Smokies Revenge - Ancho-Chipotle Brown Ale pepper sauce.

2 cups Rocky's Revenge Brown Ale
1/2 cup water
1 tsp ground Ancho pepper
1 tsp ground Chipotle pepper
7 cloves / @ 1 head of garlic
1 tbsp organic cocoa nibs / unsweetened cocoa
2 tsp molasses
1 tbsp quality salt
@ 15 dried Ancho peppers

When processing-finishing:
1 1/4 cups organic apple cider vinegar

Above is mild version. For hot sauce version, add 1 more tsp of ground Chipotle pepper, or a few peppers from Chipotles in Adobo sauce, and hotter ground pepper to taste. I'd add about 6 good dashes of Seasoning from Hell, the no-salt ground Habenero seasoning I like.

Rehydrate peppers in hot water for @ 20 minutes. Put all the top ingredients together in a pot, with the garlic crushed / chopped, or even roasted if you like. Put the heat on low. Tear or cut stems off the rehydrated peppers. Dump the seeds in the pot, cut the peppers into smallish pieces with a kitchen shears and add those. Bring to a very low boil, covered. Reduce heat and let simmer for about 30 minutes. I leave it covered so I don't lose hot sauce volume. Put it in a container in the fridge to cool. When it's cool, add the cooked pepper mixture to a food processor with the vinegar and process to your desired consistency.

This one is dark, smoky, tart and with a sneaky fiery pepper flavor. You can spoon it on eggs or meat or rice & beans.

Doh, I left out the molasses in the Smokies Revenge recipe. Fixed!

Image

Holla Sauce! Jalapeno Fire Sauce

1 teaspoon peanut oil
20-30 fresh jalapeno peppers, sliced. With the seeds for hot, peppers only for mild-medium.
5 cloves garlic, minced
1 medium red onion (1/2 cup), chopped medium fine
1 teaspoon salt
1/4 to 1/2 teaspoon hot pepper powder (cayenne, etc. I use Seasoning from Hell habenero. Exclude for mild.)
2 cups water

For Food Processor at end add:
1 cup raw organic apple cider vinegar

Same directions as above, 'cept for rehydrating peppers, you saute the peppers and onions for a bit (I do it until I'm afraid they'll burn to pan, then I add the water). Put all the top ingredients together, bring to mild boil, cook for 20-30 minutes. Cool. Process. Usually needs to set a day or two before it's all awesome. This one is bright flavors, hotter than say Tobasco jalapeno, and the ac vinegar is much more flavorful than sour or all sharp like crappy vinegar that factories use.

YES.

I've never even considered making my own hotsauce until now. This is exciting news.

For sure, I'd love some Cajun and New Orleans eats!!!

It's like a step up from making salsa or marinades. Easy to venture into ketchup and BBQ sauce from here too.

Forcing yourself to endure an unnatural diet sounds doom to me.

This was breakfast this morning. Veggie scrapple, organic eggs, couple three or four spoons of smokies revenge. YUM.

Some noms in the old thread viewtopic.php?f=227&t=34006&hilit=cookbook

Edit: I had forgotten about the developing writing style and idea of making an actual book. Aren't like half you fuckers published now? Still a good idea.

We should set up a secret FB group or something and collect submissions. One of you brain scientist types could perhaps serve as editor? Do things? Make stuff? Isn't that what we do? :thumb:

Edit: Edit: and include a cd of the comp with every copy!
