So, I have an input jack I bought for a guitar project. Guitar project has fallen to the wayside, but I just built an extension cab. Can I use this same jack for the Ext. cab?

Yes.
What kind of jack is it? IE what does it look like? Switchcraft? Enclosed in black plastic? Open? Closed?
Being able to identify which it is, I can show how you'd wire it to the speaker

I'm assuming its the mono version and not the stereo version?
The lug that is up higher that has the metal O going around the jack is ground or - , and the lower lug is what you would connect the + of the speaker to.
