Coil's mid-era drone/noise stuff is full of
modular -- Queen of the Circulating Library, Remote Viewer, etc. Late 90's to '03. Drew McDowall still does a lot of noise-y
modular in his solo stuff:

Gnod leveled my brain at Roadburn during their
modular set, but the recordings don't do the harshness justice to my experience of leaning up against the PA.

Trogotronic is MITB, obviously, and they do
modular offerings although they're probably more famous for their standalone synths (both the company and the band).

But I think part of the reason that a lot of noise folks eschew
modular for more traditional stand alone synths (or contact mic based stuff) is the workflow.
1.It's much easier to get a box designed for noise to make noise than a
modular -- I mean, take a look at the HNW synth in BST right now. That thing is fantastic, and it's going to cost you less than the average module.
2. If I'm going to make noise, I'm probably not going to pick up my 3U first, I have other tools for that application. Could I? Sure, but I could also replace all the guitar parts on a thrash record with an oboe. Same notes, maybe not the same desired intensity or timbre.
3. Speaking of intensity, lots of modern noise seems to be very performance driven, and it's a lot easier to get into the right head space when you can bash the shit out of something rather than turn a knob and patch things.
