Paint I can't help you with (although yes, I beleive the preffered method is too bake it but not in your normal oven! Those fumes aren't good) but...
Gauge of wire... can't really help as there is a difference between English and American Gauges but between stranded and solid core wire really what you feel comfortable with, sometimes I find stranded core wire to be a bit more hassle as you have to tin the ends, but sometimes Solid core is a little brittle at times and while it can help to suspend a circuit where you want it, it can also push it a place you don't want it.
